I don't know about you, but I have fond memories of grilled cheese sandwich day from the elementary school cafeteria. I remember the sandwiches looking toasted, but they were soggy, yet warm and wrapped in its own sealed package. You know what I'm talking about, I know you do !
Grill cheese sandwiches are known to consist of a slice of cheese between 2 slices of bread and grilled in butter.
From time to time I crave a good ol' grilled cheese sandwich, but not from my elementary school days and certainly not drenched in butter.
So fast forward ....
I figured it was time for an upgrade.

Spinach Pesto w/ Goat Cheese !
All Dressed up !!
Ingredients for Sandwich
Serves 1
- 2 slices of Whole Wheat bread (or your favorite)
- 1 slice of Swiss Sargento Natural Cheese
- 1 slice of provolone Sargento Natural Cheese
- 1 slice of sharp cheddar Sargento Natural Cheese
- 2 slices of green tomatoes, cut thin
- Salt and pepper, to taste
Ingredients for Spinach Pesto
Yields 1/3 cup
- 1 handful of organic spinach
- 1 tablespoon of extra virgin olive oil (EVOO)
- 1 garlic clove, peeled
- 3 tablespoon of crumbled goat cheese
- 1 teaspoon, juiced from a lemon
- 1/2 tsp of roasted/unsalted sunflower seeds
Instructions
- To make the pesto: Add the garlic, EVOO, goat cheese, lemon juice and sunflower seeds in food processor and pulse until blended. Add the spinach and pulse until smooth. Add more lemon juice or EVOO if the mixture is pasty like.
- Lets assemble the Grown -n- Sexy Grilled Cheese Sandwich: Spread the pesto on both pieces of bread. Top with cheese slices then the green tomatoes. Season the tomatoes with salt and pepper.
- Heat a non-stick skillet over medium heat. Brush EVOO on one side of the sandwich with a silicon brush and place face down heated skillet and brush the other side of sandwich. You will want this sexy sandwich to cook slow, (about 3-4 minutes per side), so turn your heat down to low and cover with a top being sure to check frequently. The sandwich is done when you have a lava-flow of melty goodness in the skillet.
- Place your sandwich on a plate and cut in half and watch the cheese ooooooozzze !
